Ingredients

For the Coffee Rub:
2 tbsp finely ground Clearly by Best Choice Coffee
2 tbsp Clearly by Best Choice Paprika
1 tbsp Clearly by Best Choice Chili Powder
1 tbsp Clearly by Best Choice Brown Sugar
1 tsp Clearly by Best Choice Ground Pepper
1 tsp seasoning salt

 

For the Roast:
2 lbs beef chuck roast
1 cup coffee
1 cup Best Choice Beef Broth
1 yellow onion, chopped
2 tbsp Best Choice Worcestershire Sauce

Directions

Prepare the coffee rub in a small bowl.

Add finely ground coffee, paprika, chili powder, brown sugar, pepper and salt to a bowl and mix with a fork.

Pat the beef dry with a paper towel.

Add half the spice blend to the top of the beef and rub in well with hands.

Turn beef over and repeat with remaining spices.

In the crockpot combine brewed coffee, beef broth, chopped onion, and Worcestershire.

Place beef roast into the slow cooker and cook on low for 5 hours or until beef reaches desired doneness.

Remove meat from the pot and shred with two forks.

Serve the beef with your favorite roasted vegetables, if desired.
