Comfort Food Series – Apple Sausage Rotini

With about 2,500 known varieties of apples grown in the US, this sweet and savory Apple Sausage Rotini recipe can be modified to change with the apples in season. This is a comfort food you truly can enjoy all-year-round.
Apple Sausage Rotini
1 tbsp. Best Choice Olive Oil
5 turkey sausage brats
1 tbsp. Clearly Organic Garlic Powder
1 tbsp. Clearly Organic Italian Seasoning
1 apple, chopped – I used Granny Smith this time
2 cups Best Choice Chicken Stock
1 can Best Choice Diced Tomatoes with Green Chilies (14.5 oz)
½ cup Best Choice Heavy Whipping Cream
10 ounces Clearly Organic Whole Wheat Rotini
1 cup Best Choice Fancy Shredded Mexican Style Cheese
Add olive oil to a large pan or skillet over medium-high heat. Slice sausage and chop onion – add to pan and cook for about 5 minutes.
Mix in garlic, Italian seasoning and apples. Cook for 1-2 minutes. Now stir in chicken stock, canned tomatoes with green chilies, heavy whipping cream and pasta. Bring to a boil; then reduce heat to medium-low. Cover and let simmer to cook pasta.
Once pasta is ready, stir in ½ cup of cheese. Remove pan from heat. Sprinkle the remaining cheese on top of pasta to melt. Sprinkle on additional Italian Seasoning depending on taste preferences. Serve and savor!
