Pancakes on the go!

Breakfast can be a hassle during the week when you’re hurried and need to get off to work or school… or both! Now this problem is solved with Berry Walnut Pancake Bars. Make them on a Sunday night for breakfast on the go all week.

Ingredients:
1 cup Best Choice All Purpose Baking Mix
½ cup milk
1 egg
1 tablespoon canola oil
¼ cup Best Choice Mini Semi-Sweet Chocolate Chips
½ cup Best Choice Walnut Pieces
½ cup Superior Selections Dried Cranberries

Directions:
Preheat oven to 350 degrees. Coat 8×8 inch pan with cooking spray. Place baking mix in a medium bowl. In a smaller bowl, add milk, egg, and canola oil; whisk until completely mixed together. Add mixture to baking mix and stir until combined. Stir in chocolate chips, walnut pieces and dried cranberries gently into batter. Pour evenly into pan and bake 15-18 minutes or until a fork inserted into the center comes out clean.

Let bars cool before slicing and serving. Place leftovers in the refrigerator. Serve with a cup of syrup for dunking or drizzle on top.
