Taco Lasagna

We’re switching up traditional tacos with this hearty Taco Lasagna recipe. Full of all of your favorite taco ingredients, this recipe is easy to make and takes only 30-40 minutes to bake. So pop it in the oven, and snack on some chips and salsa or hit the pinata while you wait. This meal is perfect for #TacoTuesdays or Cinco de Mayo!

Taco Lasagna

Ingredients:
12 Best Choice No Boil Lasagna Noodles
1 pound of ground meat (beef, turkey, venison, etc.)
1 Best Choice Taco Seasoning Mix
1 (15oz) container ricotta cheese
1 Best Choice egg
3 ½ cups Best Choice shredded cheese (I used a combination of fancy Mexican style and taco blend)
2 (16oz) jars of Best Choice Thick & Chunky Salsa

Optional extras: Black olives, green onions, sour cream, jalapeños, cilantro for toppings, and chips to compliment your meal.

Directions:
Preheat oven to 350 degrees.

In a large skillet, brown meat completely. Drain water from meat. Stir in taco seasoning until combined.

In a medium, add ricotta and egg; stir until combined.

In a 9×13 baking dish, layer 4 lasagna noodles on the bottom of the pan. Layer 1/3 of the ricotta mix, followed by 1/3 of the meat and ¼ of the salsa, and finally 1/3 of the cheese. Repeat for two more layers (you will have leftover salsa for your chips).

Cover with foil and bake 30-40 minutes. Let lasagna cool for 5 minutes before cutting. Top each piece with sour cream and other desired toppings.
