Tropical Rice Recipe

Savor the tastes of summer all-year-round with this Tropical Rice recipe. Using the 8.8oz Best Choice Quick Rice, it serves two in a matter of minutes, making it perfect for a couple or for a single dinner with leftovers for lunch the next day. Buy a larger package of traditional Whole Grain Brown Rice for a bigger group of people. This dish is great as a side or as your main meal – just add strips of sweet BBQ chicken on top of the bed of rice for a Hawaiian-style rice bowl.
1 (8.8oz) package Best Choice Quick Rice – Whole Grain Brown Rice
2 tbsp water
1/3 cup Best Choice Lightly Salted Cashew Halves & Pieces
1 can Best Choice Pineapple Chunks in 100% pineapple juice
1/3 cup Best Choice Fancy Flaked Coconut
Pour rice pouch in a skillet with water and 1 tbsp of pineapple juice from can of pineapple chunks. Warm over medium heat, stirring occasionally, until heated through.
While rice is heating, pour another tbsp. of pineapple juice from can of pineapple chunks into a skillet. Roast cashews in skillet over low heat for about 5 minutes.
Add coconut flakes to rice and mix completely. Remove rice mixture from heat. Add ½ can of pineapple chunks (no more juice) to rice mixture. Drain cashews and mix them into rice mixture also. Serve immediately in bowls and top with desired amount of cilantro.
