Crunchy Crumble Cinnamon Bread

Bread baking couldn’t be easier when it’s a simple quick bread. Your family will love this special treat and it whips up in no time. Bake an extra loaf to share with a neighbor, friend or child’s teacher. The cinnamon aroma will fill your kitchen too!

Cinnamon Swirl Filling:

1 1/2 cup Best Choice® Crispy Corn and Rice cereal,
finely crushed (about 1/2 cup)
1/2 cup Best Choice® packed brown sugar
1 1/2 teaspoon Best Choice® ground cinnamon

Bread:
3 cups Best Choice® all-purpose flour
1 1/2 teaspoon Best Choice® baking powder
1 1/2 teaspoon Best Choice® baking soda
3/4 teaspoon Best Choice® salt
1 1/2 cups Best Choice® granulated sugar
3/4 cup Best Choice® butter or margarine, softened
3 large Best Choice® eggs
1 teaspoon Best Choice® vanilla extract
1 1/2 cups Best Choice® sour cream
1/2 cup Best Choice® chopped walnuts, optional

Streusel Topping:
1/2 cup Best Choice® Crispy Corn and Rice cereal,
crushed (about 1/4 cup)
1/4 cup Best Choice® all-purpose flour
3 tbsp Best Choice® brown sugar
1/4 teaspoon Best Choice® ground cinnamon
2 1/2 tablespoons firm Best Choice® butter
1 tablespoon course decorator’s sugar, optional

Heat oven to 350°F. Grease bottom and sides of two 9 x 5-inch loaf pans with vegetable shortening and add sprinkle of flour into pans. In small bowl, combine all ingredients for filling; set aside. For bread, combine flour, baking powder, baking soda and salt; set aside. In mixing bowl, beat sugar, butter, eggs and vanilla. Slowly add sour cream and flour mixture alternately until blended. Stir in walnuts if desired. Spread approximately 1 cup batter in each pan; sprinkle with 1/4 filling over batter in each pan; repeat with batter, then filling; finish with remaining batter. Combine all ingredients for streusel topping, except the decorator’s sugar. Sprinkle streusel topping evenly over top layer of better; sprinkle decorator’s sugar over top if desired. Bake 45-50 minutes until toothpick inserted in center comes out clean. Cool 10 minutes in pan on wire rack. Remove from pan and cool on wire rack.
