Honey Soy Asian Marinated Salmon with Ginger Peanut Slaw

Ingredients

4 -6 oz Salmon filets

For the marinade:
1/4 cup Best Choice® Honey
6 tbsp Soy Sauce
1/2 cup Best Choice® Olive Oil
1 tbsp Minced Garlic
1 tsp Ginger root, minced

For the slaw:
2 tbs Best Choice® Vegetable Oil
2 tbs Best Choice® Creamy Peanut Butter
1 tbs Soy Sauce
2 tbs Rice wine vinegar
1 tbs Best Choice® Light Brown sugar
1 tbsp Ginger root, minced
1 tbsp Minced Garlic
2 cups Green cabbage, sliced thin
1 cup Red cabbage, sliced thin
1 small Red bell pepper, diced small
1 cup Carrots, cut into shoestrings or grated
3 stalks Green onions, sliced fine

Directions
Serves 4

1. Combine the marinade ingredients in a shallow dish and whisk. Reserve 3 tablespoons, and place the salmon in the remaining marinade turning once to coat evenly. Marinate for 30 minutes.
2. For the salad dressing, whisk together the vinegar, vegetable oil, peanut butter, soy, light brown sugar, garlic, and ginger in a bowl until the peanut butter is incorporated.
3. Toss the cabbages, bell pepper, carrots, and green onions together with the salad dressing, set aside.
4. Place the salmon skin side down in a non-stick pan over medium heat. Cook for 4 to 5 minutes, per side. Remove from heat and brush with the remaining marinade.
5. Serve immediately with the slaw on the side.
