Slow Cooker Gumbo

Ingredients

1 Sweet Onion – chopped
3 Celery Ribs – chopped
1 Green Bell Pepper – seeded, chopped
1 Red Bell Pepper – seeded, chopped
1 Lb Boneless, Skinless Best Choice Chicken Breast – cut to bite sized chunks
1 bag Best Choice Frozen Shrimp 21-25
28 ounce Can Best Choice Crushed Tomatoes
1 Tablespoon Best Choice Worcestershire Sauce
2 Tablespoons Cajun Seasoning
3 Garlic Cloves – peeled, grated
2 Best Choice Bay Leaves
1 teaspoon Best Choice Oregano
1 teaspoon Best Choice Thyme
1 teaspoon Best Choice Paprika
2 Cups Best Choice Chicken Broth
Salt/Pepper – to taste
1½ Cups Best Choice Long Grain White Rice

Warm up with Best Choice’s Slow Cooker Gumbo. Loaded with Best Choice spices and easy-to-find ingredients, this is a great lunch or dinner option.

Directions

Combine all ingredients in large slow cooker minus salt, pepper, shrimp and rice.

Cook on high for 3-4 hours.

Salt and pepper to taste. Stir in rice, cover and cook on high for roughly 30 minutes. Check for doneness after 15 minutes. Add in shrimp and cook for an additional 15 minutes.  Add more water or broth if necessary.

Discard bay leaves and serve.
