We love s’mores and have made many variations of them throughout the years. This time, we teamed up with Always Save to create these S’mores Oatmeal Bars!
½ cup butter, softened
1 cup brown sugar
1 tsp. vanilla extract
½ tsp. baking soda
½ tsp. salt
1 ¼ cups flour
1 ½ cups quick oats
1 jar marshmallow crème
1 cup chocolate chips
Preheat oven to 350 degrees. Line a square pan with foil and spray with non-stick cooking spray.
Cream butter and sugar together with a mixer until smooth. Beat in egg, vanilla, baking soda and salt. Mix in flour. Finally, slowly mix in oats.
Press half of the dough mixture into the prepared pan. Open marshmallow crème, removing lid and safety wrap. Microwave for 10 seconds to soften. Pour over the bottom layer of dough in pan and spread evenly in the middle. Be sure to leave an edge without crème (about ½ inch or so).
Sprinkle chocolate chips on top of marshmallow crème. Then scoop the remaining dough on top and use your hands to smooth it out into a top layer going all the way to the edges.
Bake around 20-25 minutes – the top of the bars should be golden brown when finished. Let them cool completely before slicing, allowing tops to harden a bit. They will be gooey and sticky when slicing (just like a real s’more), but absolutely delicious! Enjoy.
