Makes 4-6 servings
4 cups spring salad mix
3/3 cup very thinly sliced red onion
2 cups diced ripe tomatoes
2 cups quartered strawberries
½ cup Best Choice pecans halves
2/3 cup Best Choice balsamic vinaigrette dressing
¼ cup grated Best Choice Parmesan cheese
Best Choice salt and pepper, to taste
12oz Best Choice Whole Wheat Penne Rigate
Cook the Penne according to package directions. When pasta is al dente, drain.
Next put salad mix in large mixing bowl. Pour hot, well-drained pasta over salad mix. Sprinkle onions, tomatoes, strawberries and pecans on top of the pasta. Season with salt and pepper. Add balsamic vinaigrette dressing and Parmesan cheese. Toss all ingredients well. Serve immediately.
