Summer Hash

Start your morning off strong with this summer hash with rich potatoes.

Ingredients

  • 1/4 c. & 1 Tbsp Best Choice extra-virgin olive oil
  • 8 hot dogs, thinly sliced
  • 48oz bag Best Choice Potato O’Brien
  • Best Choice salt
  • Best Choice black pepper
  • 2 garlic cloves minced
  • 4 Best Choice eggs
  • Sliced green onions, for garnish

Instructions

  • In a large skillet, over medium-high heat, warm 1 tbsp of olive oil. Add hot dogs and cook until browned. Approximately five minutes. Transfer to another plate for later.
  • Add 1/4c olive oil, minced garlic and Potato O’Brien to skillet. Cover and cook over medium heat, about five minutes. Remove lid and add salt and pepper. Cook until potatoes are golden brown. Stir hot dogs and cook until warmed throughout. About three minutes.
  • Make 4 indentations in the skillet mixture. Crack 1 egg into each indentation. Cover and cook until desired egg doneness.
  • Garnish with green onions and serve warm.
