Three Cheese Roasted Red Pepper Dip

Makes 10 servings

8 oz Best Choice® Cream Cheese, at room temperature.
4 oz Best Choice® Sour Cream
1/2 cup Best Choice® Shredded Sharp Cheddar Cheese
1/2 cup Best Choice® Crumbled Feta Cheese
2 Red bell peppers
1/2 cup Green onions, sliced thin
1/2 tsp Best Choice® Garlic Powder
1 tsp Best Choice® Paprika
Best Choice® Assorted Crackers

Directions
Serves 8

1. Roast the red bell peppers over an open gas flame, turning frequently with tongs until all sides are charred black.
2. Place the peppers in a bowl and cover tightly with plastic wrap. Let sit for 15 minutes.
3. After the peppers have cooled, peel the red peppers, removing the stems and seeds. Puree the peppers in a food processor.
4. In a medium bowl, using a wooden spoon, soften the cream cheese until smooth. Add the roasted pepper puree and mix until incorporated followed by the sour cream. Continue mixing until you have a smooth mixture. Add the cheddar cheese, feta cheese, green onions, garlic powder and paprika. Fold together until evenly distributed.
5. Serve with your favorite Best Choice® Crackers.
