Black Bean & Corn Tacos

Ingredients

1 tbsp Clearly by Best Choice Olive Oil
1 yellow onion, chopped
1 can Clearly by Best Choice Black Beans, drained and rinsed
1 can Clearly by Best Choice Whole Kernel Sweet Corn
1 packet Clearly by Best Choice Mild Taco Seasoning
1/2 cup water
1 cup romaine lettuce leaves, chopped
1/2 cup tomato, chopped
8 flour tortillas

Add a burst of flavor to your graduation celebration with these Black Bean & Corn Tacos! Whether you’re serving them as a light snack or a main dish, these tacos are both satisfying and delicious—guaranteed to be a hit with your guests!

Directions

Add the olive oil to a medium size sauté pan.

Place the chopped onion in the pan and heat over medium heat for 8 minutes.

Add the rinsed black beans, corn, taco seasoning packet, and 1/2 cup water.

Reduce heat to low and let contents simmer for 8 to 10 minutes.

Line each tortilla with lettuce and tomato.

Divide the bean and corn filling evenly between the tortillas.
*The bean filling also works well in lettuce wraps for a vegetarian and gluten-free option.

Top with additional cheese and sour cream if desired.

Serve warm or at room temperature.
