Directions
In a small bowl, whisk together all the ingredients for the peanut sauce. Whisk in extra water if you desire a thinner consistency for the sauce.
For the chicken mixture, heat the olive oil in a large sauté pan over medium heat.
Add the chopped onion and mushrooms and cook for 5 minutes, or until onions are translucent.
Next, add in the julienned carrots, sliced water chestnuts, and minced garlic. Stir contents and sauté for 5 to 8 minutes, or until the carrots reach desired consistency.
Remove the vegetables from the pan and set aside in a bowl.
Heat the sesame oil to the sauté pan, add the ground chicken, and cook over medium heat for about 5 minutes.
Pour the teriyaki sauce over the meat and continue cooking for 5 minutes or until ground chicken is fully cooked through, temping at 165°F.
Add the vegetables back to the sauté pan with the meat and simmer for 3 minutes while stirring contents together.
Remove the chicken mixture from the heat and set aside to cool.
Scoop generous amounts of the chicken meat mixture into each lettuce leaf. Garnish with green onion slices and bean sprouts if desired.
Drizzle peanut sauce over the top of the lettuce wraps. Serve additional peanut sauce on the side.
