DIRECTIONS
In a large mixing bowl, add softened butter and sugar, and cream together with an electric mixer.
Whip the butter and sugar together for at least 2 minutes. Scrape down the sides of the bowl as needed.
After the 2 minutes, add the eggs one at a time and mix in between each for one minute.
Once all the eggs are in, add the vanilla and mix for one more minute.
In a separate bowl, stir together the gluten-free flour, baking powder, and salt with a fork.
Add the dry ingredients to the wet ingredients in small batches while mixing on a slow speed in between each addition.
Once the dough forms a ball, cover and refrigerate it overnight or for at least 3 hours.
For best results, make drop cookies!
To bake drop cookies, preheat the oven to 350 degrees.
Scoop out the dough in a 2-tablespoon-sized glob and roll it into a ball with your hands.
Place the ball on a baking sheet and press down slightly with the palm of your hand.
Bake the cookies for 10 minutes or until they are set.
Let them cool on the pan, then transfer them to a cooling rack.
You can sprinkle with sugar or top the cookie with your favorite frosting.
Then move them to an airtight container for storage.
