DIRECTIONS
Preheat the oven to 400°F.
Make a foil or parchment paper square to wrap the garlic head in.
Remove any extra layers of papery white skin from the garlic bulb but leave enough skin, so the garlic head stays together.
Cut off the top, about 1/4 inch from the top of the garlic cloves. You should be able to see the inside of the individual cloves.
Place the garlic on top of foil or parchment, cut side up.
Drizzle the olive oil over the garlic cloves and add a pinch of salt and pepper.
Pull the sides of the parchment or foil closed, so it is sealed. The parchment paper may need to be tied with kitchen twine.
Place the packet on a baking sheet in the oven.
Roast the garlic until the cloves are light brown, soft, and fragrant, for about 25 – 30 minutes.
Check the garlic after 20 minutes. If you desire a more caramelized garlic clove, leave the foil or parchment wrap open for the last 5 minutes of cooking.
Remove the garlic from the oven and let it cool for 10 minutes. Then gently remove the individual cloves from the paper.
