The Mighty Mushroom

Mushrooms are best known for their savory and meaty flavor. This versatile veggie is also a good source of plant-based protein. Many vegans and vegetarians enjoy mushrooms as a way to help gain their daily protein needs. Mushrooms are a type of healthy fungi that contain about 15 different vitamins and minerals. They are also a good source of antioxidants and fiber.   The anti-inflammatory properties in mushrooms help protect people from a number of diseases such as heart disease and some cancers.

The most common form of mushroom sold at local grocery stores is white button mushrooms. They are most commonly consumed in soups, salads, casseroles, stir-fries or eaten raw. Other varieties such as cremini and shiitake mushrooms have similar nutrition profiles but offer more intense and richer flavor when added to a recipe. Fortunately, most varieties can be found year-round. The beautiful thing about cooking with mushrooms is that they can add a bold flavor with lots of nutrients without a lot of added calories. One serving of mushrooms is considered 1 cup raw or half a cup cooked. Next time your selecting veggies for a recipe considering adding a handful of mushrooms for added flavor and nutrients.
