In a large lidded pot, over medium heat, add the diced onion and olive oil.
Cook the onions until they are translucent, about 5 minutes.
Add garlic and lean ground beef to the pot and continue cooking until beef is browned and cooked through.
Drain beans and add them to the pot along with the diced tomatoes with juice, puréed pumpkin, tomato paste, corn, and broth.
Stir all the ingredients together before add all the spices, and stir again to thoroughly combine.
Put the lid on the pot and let contents come to a boil, stirring occasionally.
Reduce the heat to a simmer and let the chili continue to cook for at least 45 minutes.
Taste the chili and adjust the spices as needed.
Serve warm with your choice of toppings.
