Feta, Olive, & Onion Greek Pizza


1 tube of Best Choice Pizza Dough

2 cups Best Choice Superior Selections Feta Cheese Crumbles

12 Best Choice Superior Selections Kalamata Olives, halved


Caramelized red onions:

1 tbsp Best Choice Superior Selections Extra Virgin Olive Oil

1 lb red onions, cut lengthwise into slices 1/8 inch thick

2 tbsp water

1 tbsp Best Choice Superior Selections Red Wine Vinegar

1 tsp Best Choice Dried Oregano

Best Choice Superior Selections Mediterranean Sea Salt, to taste

Best Choice Superior Selections Pepper Supreme, to taste

Heat a large frying pan over medium heat.

Add the olive oil and onions and reduce the heat to low.

Add the water and toss to coat the onions.

Cover and cook, stirring occasionally until the onions are tender, about 8 minutes.

Increase the heat to medium-high.

Cook, stirring occasionally, until all the moisture is evaporated and the onions begin to turn golden, about 5 minutes.

While stirring, mix in the vinegar, oregano, and salt and pepper, to taste.

Cook for 1 minute, then remove from the heat and let the onions cool to room temperature.

Position a rack in the lowest position in the oven and preheat the oven to 450°F.

Lightly oil a large baking sheet.

On a lightly floured work surface, gently roll out the pizza dough to fit the prepared baking sheet.

Transfer the dough to the sheet.

Spread the caramelized onions over the pizza dough and top with the feta cheese crumbles.

Bake until the crust is nicely browned, 20 to 25 minutes.

Sprinkle the olive halves over the pizza during the last 5 to 10 minutes of baking.

Cut the pizzas into 8 slices and serve immediately.
