Honey Glazed Brussels Sprouts

Ingredients

1 1/2 lb brussels sprouts, trimmed, halved

1/4 cup Best Choice Superior Selections Extra Virgin Olive Oil

1 tsp Best Choice Superior Selections Sea Salt, separated in half

Pinch Best Choice Ground Pepper

1/4 cup Clearly by Best Choice Raw Honey

1/4 cup Best Choice Superior Selections Red Wine Vinegar

3/4 tsp Best Choice Crushed Red Pepper Flakes

3 tbsp Best Choice Unsalted Butter

3 scallions, thinly sliced on a diagonal

1 tsp finely grated lemon zest

DIRECTIONS

Place a rimmed baking sheet on bottom rack of the oven and preheat the oven to 450°F.

Toss the brussels sprouts and oil in a large bowl.

Season the brussels sprouts with the half the salt and a pinch of pepper.

Carefully remove baking sheet from oven and, using tongs, arrange the brussels sprouts cut side down on baking sheet.

Roast the brussels sprouts on bottom rack until they have softened and are deeply browned, 20–25 minutes.

Meanwhile, in a small saucepan, bring honey to a simmer over medium-high heat.

Reduce the heat to medium-low and cook the honey, stirring often, until it is a deep amber color, but not burnt, for about 3–4 minutes.

Remove the honey from the heat and add the vinegar and red pepper flakes.

Whisk the honey mixture together until the sauce is smooth.

Return the saucepan to the stove to cook over medium heat.

Add the butter and the other half of the salt to the saucepan and cook, whisking constantly, until glaze is glossy, bubbling, and has slightly thickened. This takes about 3–4 minutes.

Transfer the brussels sprouts to a large bowl.

Add the glaze and scallions and toss the brussels sprouts to combine.

Transfer to a platter and top the dish with the lemon zest.
