Mango & Chicken Skewers

Ingredients

1 1/2 cup Best Choice Frozen Sweet White Corn, thawed

1 tbsp Best Choice Unsalted Butter

1/3 cup plus 3 tablespoons sliced green onions, divided

1 lb boneless skinless chicken breasts, cut into 1-inch cubes

1/2 tsp Best Choice Superior Selections Himalayan Pink Sea Salt

1/4 tsp Best Choice Superior Selections Pepper Supreme

2 cups Best Choice Superior Selection Frozen Mango Chunks, thawed

1 tbsp Best Choice Superior Selections Extra Virgin Olive Oil

Fire up your grill and gather your friends! Spring is the ideal time for outdoor gatherings, and we have the perfect recipe for you. Our sweet and savory Mango & Chicken Skewers provide a harmony of flavors for your guests to enjoy.

 

Directions

In a large skillet, heat the butter over medium-high heat.

Sauté the corn until crisp-tender, about 5 minutes.

Stir in the 1/3 cup green onions and keep warm.

Toss the chicken with salt and pepper.

Alternating, thread the chicken and mango onto four metal or soaked wooden skewers.

Brush each chicken mango skewer with the olive oil.

Grill, covered, over medium heat until the chicken is no longer pink and has the internal temperature of 165°F, 10-12 minutes, turning occasionally.

Serve with the corn mixture and sprinkle with remaining green onions.

If desired, serve with the lime wedges.
