Directions
In a large skillet, heat the butter over medium-high heat.
Sauté the corn until crisp-tender, about 5 minutes.
Stir in the 1/3 cup green onions and keep warm.
Toss the chicken with salt and pepper.
Alternating, thread the chicken and mango onto four metal or soaked wooden skewers.
Brush each chicken mango skewer with the olive oil.
Grill, covered, over medium heat until the chicken is no longer pink and has the internal temperature of 165°F, 10-12 minutes, turning occasionally.
Serve with the corn mixture and sprinkle with remaining green onions.
If desired, serve with the lime wedges.
