Put cloves in a bowl with lime juice. Let sit for 15 minutes.
Preheat oven to 325 F
Drain the garlic cloves, but reserve the juice for later.
Add garlic to a glass casserole and pour enough olive oil to cover the garlic. Roast in oven for 45 minutes.
Remove from oven and let cool. Don’t be alerted by darken cloves. Scoop the cloves with a slotted spoon and place in a mason jar. Place the reserved lime juice and about ½ cup olive oil over those cloves. (See below for options on how to use your roasted garlic).
Place into 1 emptied wine bottle or 3 smaller bottles to offer as gifts. Let olive oil set for at least two weeks.
You have a few options for these garlic cloves. You can add a clove of garlic to your gift size jar to continue to infuse the olive oil and to add a decorative touch. You can also add a fresh herb to add more flavor.
Keep the roasted garlic to treat yourself! Add them to mashed potatoes or to vegetables and even toast.
