Game day just got tastier! These Tailgate Pimento Tots stack crispy coin potatoes with creamy pimento cheese and smoky bacon for a bite-sized snack that brings big-time flavor. Serve ’em hot and watch them disappear before halftime!
Directions
Preheat your smoker to 275°F.
Season the frozen potato puffs with the BBQ rub and leave them out to defrost.
In a medium bowl, mix the shredded cheese and pimento spread until well combined.
Chill the mixture in the fridge until ready for use.
Spray two smoker safe wire racks with Best Choice Cooking Spray.
Wrap each thawed potato puff with one half slice of bacon.
Make sure the puff is at the bottom edge of the bacon leaving space at the top for the pimento mixture.
Secure each bacon wrapped puff with a toothpick to keep the bacon from falling off the puff.
Place 1/2 tsp to 1 tsp of the pimento cheese mixture in the available space between the top of the potato puff and the top edge of the bacon.
Set the wrapped and stuffed puffs on the greased wire racks and place them in the smoker over indirect heat for one hour.
*If you are using the jalapeño and French fried onion garnishes, remove the racks at 45 minutes and place one jalapeño slide and a few onion pieces on top of the pimento cheese mixture. Return the racks to the smoker and cook for another 15 minutes.
Once the bacon is cooked to your liking, remove the pimento tots and enjoy with a drizzle of honey or a BBQ sauce dipper.
