Directions:
Bring a large pot of water to a boil. Cook pasta according to package directions. Drain pasta and set aside.
While pasta is cooking, heat 1 tbsp olive oil in a large skillet over medium heat. Cook shallot for about two minutes, then add garlic and cook for another minute. Next, add shrimp 1/2 tsp red pepper, salt and pepper to skillet. Saute shrimp until cooked through about 3-4 minutes. Remove shrimp from skillet and set aside.
Return skillet to medium heat and add another tbsp of olive oil. Add Tuscan Blend veggies with remaining red pepper. Saute vegetables for 5 minutes, then add white wine and cooked shrimp to skillet; cook for 2 minutes. Finally stir in lemon zest and juice, cooking for about 1 additional minute. Remove from heat. Pour pasta in the skillet; toss to coat and mix all ingredients together. Plate and top with Parmesan cheese. Serve warm.
