DIRECTIONS
Preheat your oven to 375°F.
Melt the butter in a medium skillet over medium heat.
Add the onion and garlic to the pan and sauté until the onions are lightly browned, about 7 minutes.
While the onions and garlic are cooking, drain the thawed spinach.
Stir in the spinach, mushrooms, feta, and 1/2 cup of cheddar cheese.
Cook the ingredients for an additional 2-3 minutes and season with salt and pepper to taste.
Remove the skillet from the heat and spoon the mixture into the pie shell.
Whisk the eggs and milk together in a medium bowl until combined. Season with salt and pepper.
Pour the egg mixture over the spinach mixture in the pie shell, allowing both mixtures to thoroughly combine.
Place the pie crust with the mixtures in the oven and bake for 15 minutes.
While the quiche is baking, sprinkle the top with the remaining cheddar cheese and bake until it is set in the center, about 35 to 40 minutes longer.
Remove the quiche from the oven and allow it to cool for 5 minutes.
Slice into six pieces and enjoy your Spinach & Cheese Quiche anytime of the day!
