Chicken Cacciatore

Ingredients

6 boneless chicken thighs, trimmed
1/2 tsp salt
1/4 tsp Clearly by Best Choice Ground Pepper
2 tbsp Clearly by Best Choice Olive Oil
1 yellow onion, chopped
2 celery ribs, chopped
3/4 cup green bell pepper, chopped
3/4 cup red bell pepper, chopped
8 oz white mushrooms, sliced
2 garlic cloves, minced
1 1/2 tsp Clearly by Best Choice Oregano
1 tsp Clearly by Best Choice Garlic Powder
Pinch of red pepper flakes
1 cup red wine
1 can Clearly by Best Choice Fire Roasted Diced Tomatoes
1 can Clearly by Best Choice Crushed Tomatoes

Rustic, rich, and ready to impress. Our Chicken Cacciatore simmers tender chicken in bold Clearly by Best Choice Fire Roasted Diced Tomatoes, creating a cozy, flavor-packed dish that tastes like it’s been cooking all day. Serve it by itself or over pasta, rice, or polenta—comfort is served!

Directions
Season chicken thighs with salt and pepper.

In a large sauté pan, heat the olive oil over medium heat and add in the chicken.

Cook the chicken until it browns on the outside, about 4 minutes on each side.

Remove the chicken from the pan and set it aside. Chicken will NOT be fully cooked.

In the same pan add in the onions, celery, peppers, mushrooms, and garlic.

Top with the oregano, garlic powder, red pepper flakes, and some additional salt and pepper, if desired.

Toss the vegetables and seasoning to combine and cook for 10 minutes stirring occasionally.

Slowly pour in the red wine and let the mixture simmer for 10 minutes or until wine is reduced by about half.

Add the fire roasted diced tomatoes and crushed tomatoes.

Cook for 10 to 15 minutes, place chicken thighs back in the pan.

Stir contents well, then reduce heat to low and let simmer for about 30 minutes or until chicken is cooked to 165F.

Let the cacciatore cool for 5 minutes.

Garnish with fresh basil and parsley if desired. Enjoy!
