Hearty Vegetable Stew

Ingredients

2 tbsp Clearly by Best Choice Olive Oil
1 yellow onion, chopped
16 oz package of baby portobello mushrooms, sliced
3 large carrots, peeled and sliced
4 celery stalks, sliced
4 garlic cloves, minced
2 tsp Clearly by Best Choice Dried Thyme
1 tsp Clearly by Best Choice Ground Pepper
1/4 cup Best Choice All-Purpose Flour
1 tbsp Best Choice Tomato Paste
1 can Clearly by Best Choice Fire Roasted Diced Tomatoes
4 cups Clearly by Best Choice Vegetable Broth
3 large Yukon gold potatoes, cubed
Fresh parsley (optional)

Warm up from the inside out with Hearty Vegetable Stew, simmered to perfection in rich, flavorful Clearly by Best Choice Vegetable Broth. Packed with tender veggies and soul-soothing comfort, it’s the cold-weather bowl you’ll want to come home to all season long.

Directions
Heat a large pot over medium heat and add the olive oil, chopped yellow onion, and mushrooms.

Cook for about 12 minutes or until mushrooms have released most of their moisture.

Add the sliced carrots, celery, garlic, dried thyme and ground pepper. Cook until carrots soften, about 6-8 minutes.

Add the tomato paste and stir to combine.

Add the flour then stir again to evenly incorporate and coat vegetables. Cook for 2-3 minutes.

Pour in the diced tomatoes and vegetable broth.

Bring contents to a boil.

Once boiling add the potatoes and reduce the heat to medium low.

Simmer the stew for 45 minutes or until potatoes are tender and the broth has thickened.

Season to taste and garnish with fresh trimmed parsley before serving, if desired.
