Directions
Preheat oven to 350°F.
Spray a 9×5 loaf pan with Clearly by Best Choice cooking spray.
In a mixing bowl mash bananas with a fork then whisk in eggs.
Add peanut butter, vanilla and coconut sugar to the mashed bananas then stir with a fork.
In a separate bowl add coconut flour, baking power, baking soda, cinnamon, nutmeg and salt.
Gently stir dry ingredients with a fork.
Add flour mixture to the bananas.
Stir well to combine then let batter rest for 15 minutes before baking.
This allow ingredients to absorb before cooking.
Transfer batter to the greased loaf pan and bake for 45 to 50 minutes.
Insert knife into the middle to test for doneness.
Remove from oven and let cool for 15 minutes before cutting.
