Banana Bread Bundt Cake with Cream Cheese Frosting

Ingredients

Cake:

2 cups flour

1 tsp baking powder

1 tsp baking soda

½ tsp salt

1/3 cup butter, softened

1 ¼ cups granulated sugar

2 large eggs

½ tsp vanilla

3 medium bananas, mashed (best if overripe)

1 cup sour cream

½ cup pecan pieces

Frosting:

3 oz cream cheese, softened

1 ½ cups powdered sugar

½ tsp vanilla

½ tsp ground cinnamon

3 tsp milk

Fluffy, fruity, crunchy and just the right amount of sweet – nothing beats a good, old-fashioned banana bread made even better iced and in cake form. Enjoy!

Directions:

Preheat oven to 350 degrees. In a large bowl, whisk flour, baking powder, baking soda and salt together for about 20 seconds.

In another bowl, whip butter with an electric mixer until fluffy. Add sugar and continue mixing until combination is fluffy. Mix in eggs and vanilla. Then, mix in mashed bananas. Add flour and then finally sour cream. Combine completely.

Spray bundt pan with non-stick cooking spray. Pour in batter and spread evenly throughout pan. Bake around 45 minutes or until toothpick in the center comes out clean. Remove from oven and let cake set in pan for around 5 minutes. Then remove cake from pan. Let cake cool completely while making frosting.

For the frosting, whip together cream cheese, powdered sugar, vanilla and cinnamon with an electric mixer. Add in milk and mix until you’ve reached the frosting consistency that you want. Pour icing over bundt cake, then top with chopped pecans.
