Country Style Scrambled Eggs

Ingredients

8 Best Choice Thick Sliced Bacon, diced
2 cups diced red potatoes
1/2 cup chopped onion
1/2 cup chopped green pepper
8 Best Choice Large Eggs
1/4 cup Best Choice 2% Milk
1 teaspoon Best Choice Salt
1/4 teaspoon Best Choice Pepper
1 cup Best Choice Shredded Cheddar Cheese

This hearty, comforting dish is the ultimate breakfast indulgence, perfect for a cozy morning or a family gathering.

Directions
In a large cast iron or ovenproof skillet, cook bacon over medium heat until crispy.

Using a slotted spoon, remove the bacon and place them on a paper towel lined plate to drain.

Cook the potatoes in the bacon drippings over medium heat for 12 minutes or until tender.

Add the onion and green pepper and cook for 3-4 minutes or until crisp-tender.

Draining the liquid from the veggies.

Once most of the liquid has been removed, stir the bacon back into the skillet.

In a large bowl, whisk the eggs, milk, salt, and pepper together.

Gently pour them into the skillet.

Cook until eggs are completely set, stirring occasionally.

Sprinkle the cheese on top of the egg mixture and stir it in or let stand until melted.
