Such an easy side dish to make for a get-together or pack it up in separate containers for a week of flavorful work lunches!
8 ounces (half a box) of Best Choice Pasta (penne, rigatoni, macaroni – any will do, just pick your favorite!)
3 cups torn Romaine lettuce
2 cups matchstick carrots
1 can Best Choice Sweet Peas (drained)
1 container of cherry tomatoes, cut in halves
1 ½ cups Best Choice Real Mayonnaise
½ packet of Best Choice Ranch Dip Mix
1 tsp Best Choice Curry Powder
¾ cup Best Choice Natural Sliced Almonds
Cook pasta according to directions on the box. While pasta is cooking, in a large glass salad bowl, layer ingredients in this order: lettuce, carrots, peas and tomatoes.
Once pasta is finished, drain and rinse with cold water. Drain well. Let pasta rest in refrigerator while making mayo mixture.
In a large bowl, stir ranch dip mix, curry powder and mayo together until well combined. Add pasta and mix until pasta is completely covered. Top the salad bowl with pasta and then sprinkle on almonds. Serve cold.
