This recipe comes from the side of our Chocolate HappyO’s cereal. These muffins make for a sweet way to start your day!
2 cups Best Choice Chocolate HappyO’s cereal, finely crushed into 2/3 cup
1 ½ cups Best Choice flour
2 teaspoons Best Choice baking powder
2 teaspoons Best Choice unsweetened cocoa
1 tablespoon Best Choice sugar
½ teaspoon Best Choice salt
1 cup mashed bananas (2 whole ripe bananas)
2 Best Choice eggs
2/3 cup Best Choice milk (1% or 2%)
½ cup Best Choice canola oil
1 teaspoon almond extract
½ cup Best Choice mini semi-sweet chocolate chips
Preheat oven to 350 degrees.
In one bowl, combine crushed cereal, flour, baking powder, cocoa, sugar and salt. In another bowl, whisk together banana, eggs, milk, oil and almond extract. Stir in the dry ingredients and mix well. Fold in chocolate chips.
Fill paper-lined muffin cups ¾ full. Bake muffins for 20 minutes and cool on rack for 5 minutes after removing muffins from oven.
Makes 12 muffins.
