This month, Best Choice brings you three recipes to help celebrate Frozen Food Month. Great options for your breakfast, lunch, or dinner.


Waffles with Berry Compote

Your favorite Best Choice frozen waffles

1 cup Best Choice frozen mixed berries
2 tbsp of water
2 tbsp of Best Choice sugar

Add sugar and frozen berries in a small skillet on medium heat and bring to a boil. Add water and cook for 2-3 more minutes. Meanwhile, prepare your waffles. When your compete is ready to eat fruit will have a glazed look. Serve compote over your waffles.

Grain Bowl

1 cup Best Choice rice or 2 frozen Best Choice cauliflower rice bags
1/2 teaspoon freshly ground black pepper
1 bag of Best Choice frozen broccoli
1 bag of Best Choice frozen cauliflower
Best Choice extra-virgin olive oil
8 ounces mushrooms, cleaned and sliced (about 2 1/2 cups)
4 Best Choice eggs
Hot sauce, for serving (optional)
1/2 cup Best Choice Parmesan shredded cheese (optional) for serving

Prepare rice by following the instructions on packaging.

Preheat the oven to 425°F. Break up the broccoli and cauliflower into a single layer on a large baking sheet. Bake for 10 minutes, remove and drizzle with the olive oil, and stir to combine. Return to the oven and roast until the vegetables get brown and crispy at the edges, another 10-20 minutes, stirring halfway through the cook time.

Meanwhile, melt the remaining tablespoon olive in a large skillet over medium-high heat. Add the mushrooms and cook, stirring only 2 or 3 times, until the mushrooms are deeply browned, about 10 minutes

Also meanwhile, prepare your egg by frying it in the same skillet with a little more olive oil.

Divide the rice among four bowls. Top with an equal amount of the broccoli, cauliflower, and mushrooms. Place an egg on each serving. Serve immediately with hot sauce and cheese.

Green Avo-fredo Pasta with Shrimp and Bacon

1 bag 21/30 Best Choice Shrimp, peeled & deveined, tails removed
4 tbsp olive oil, divided
2-3 zucchini, ends trimmed
1-2  avocados, peeled, pitted
¼ cup Best Choice Walnuts
Juice of a lemon
3 garlic cloves
Best Choice Real Bacon Bites, for servings


Using a spiralizer, julienne peeler or mandoline, make zoodles from the zucchini.

In a food processor, process the avocado, walnuts, lemon juice and garlic until the mixture is smooth and creamy. Add water if the mixture is too thick.

In a large skillet, heat 2 tbsp of oil over medium heat. Cook the shrimp for about 4 minutes, until pink, stirring occasionally. Transfer the shrimp to a large bowl.Heat 2 tbsp of oil in the skillet over medium heat and add the zoodles.

Stir the sauce into the zoodles. Cook for 3-4 minutes, or until the zoodles are tender and the sauce is heated through, stirring occasionally. Stir in the shrimp and cook for 1 more minute.  Assemble in a bowl and top with bacon bites.
