3/4 cup oat flour
1 cup Best Choice Whole Wheat Flour
1 tsp Best Choice Baking Soda
1/2 tsp Best Choice Salt
2 tsp Best Choice Cinnamon
1/2 tsp Best Choice Nutmeg
1/2 tsp Best Choice Ground Ginger
1/2 cup Best Choice Black Walnuts
15oz can of Best Choice 100% Natural Pumpkin
3/4 cup Best Choice Superior Selections Wildflower Honey
1/3 cup Clearly by Best Choice Organic Coconut Oil
Extra oats and nuts for topping
Preheat your oven to 350°F while you coat an 8in loaf pan in your choice of oil. Don’t skimp on the oil!
Add both flours, baking soda, salt, spices, and walnuts into a medium bowl. Stir until well combined.
Grab a large bowl and whisk together the pumpkin, honey, nut oil, and eggs.
Add the dry ingredients into the wet ingredients and stir lightly until everything is combined.
Pour the pumpkin mixture into your loaf pan. Top the mixture with the extra oats and nuts to your liking.
Place the pan into the oven and bake for 50-60 minutes. The bread is just right when the top is slightly springy or when your toothpick comes out clean.
Leave the bread to cool. Slice and serve with butter.
