Lemon Squares


3 1/2 cups Best Choice Graham Cracker Crumbs

1 3/4 cups Best Choice Sugar, divided

1 tbsp Best Choice Cinnamon

1 1/4 cups Best Choice Butter, melted

16 oz Best Choice Cream Cheese, softened

2 cups Best Choice Heavy Whipping Cream

1 tsp lemon extract

15 oz lemon curd

In a large mixing bowl, mix the cracker crumbs, 3/4 cup sugar, and cinnamon.

Stir the melted butter into the crumbs mixture.

Press 3/4 of the crumb mixture onto the bottom of a greased 9 x 13 pan. Reserve the other 1/4 of the crumb mixture for topping.

In another large mixing bowl, beat the cream cheese and remaining sugar until smooth.

Slowly mix in the heavy whipping cream and lemon extract until soft peaks start to form.

Spread half of the cream cheese mixture over the crumb crust.

Gently spread the lemon curd over cream cheese layer.

Then, spread the remaining cream cheese mixture over the lemon curd layer.

Sprinkle the rest of the cracker crumb mixture over the finished dish.

Cover the dish with plastic wrap and refrigerate it overnight.
