Pumpkin Spice Muffins

Pumpkin season is here! While pumpkin-flavored everything is all the rage, nothing tops a good homemade treat. You can enjoy these delicious muffins with friends, or keep them all to yourself. Either way, our Pumpkin Spice Muffins are hard to beat. Grab all the ingredients at your local grocery today and whip these tasty snacks up tonight!


Preheat the oven to 350°F. Line a 12-cup muffin pan with cupcake liners.

Whisk the flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice together in a large bowl.

In a medium bowl, whisk the oil, eggs, brown sugar, pumpkin, and vanilla extract together until well combined.

Pour the wet ingredients into the dry ingredients and use a whisk to combine.

Spoon the batter into the cupcake liners, filling them only 2/3 full to avoid spilling over the sides.

Bake the muffins for 20-22 minutes and allow the cupcakes to cool completely before frosting.

Make the frosting: In a large bowl, using a handheld mixer fitted with paddle attachments, beat the cream cheese and butter together on high speed until smooth and creamy.

Add 3 cups of the powdered sugar, vanilla, and salt. Beat on low speed for 30 seconds, then switch to high speed and beat for 2 minutes.
*If you want the frosting a little thicker, add the extra 1/4 cup of powdered sugar.

Frost the cooled cupcakes and enjoy!

Store the leftovers in the refrigerator for up to 5 days.
