4 Small Tomatoes or Large Romas
4 Best Choice Eggs
Best Choice Salt and Pepper
1 Tbsp Fresh Parsley, chopped
3 Green Onions, chopped
Preheat oven to 350 degrees.
Grease a shallow, ovenproof baking dish.
Cut a small slice off the top of each tomato and scoop out the pulp with a spoon. Season inside the tomatoes.
Put the tomatoes in the dish and break an egg into each one. Season the eggs with salt and pepper.
Bake for 20 mins or until eggs have set.
Top with parsley & green onion.
Serve with avocado and lots of crusty bread and butter.
