Salmon Foil Bake


4 5oz salmon fillets

2 tsp Best Choice Superior Selections Extra Virgin Olive Oil plus 2 tablespoons

Best Choice Superior Selections Mediterranean Sea Salt

Best Choice Superior Selections Pepper Supreme

3 tomatoes, chopped, or 1 can chopped tomatoes, drained

2 chopped shallots

2 tbsp Best Choice Lemon Juice

1 tsp Best Choice Dried Oregano

1 tsp Best Choice Dried Thyme

No mess, no stress, and healthy to boot! Our Salmon Foil Bake is a fantastic recipe for your weekly meals this new year. Full of flavor and easy to make on any night of the week, this meal will quickly become a favorite. Gather all the ingredients you need at your local grocery store today.



Preheat the oven to 400°F.

Sprinkle the salmon with 2 tsp olive oil, salt, and pepper.

In a medium bowl, stir the tomatoes, shallots, 2 tbsp of oil, lemon juice, oregano, thyme, salt, and pepper to blend.

Place a salmon fillet, oiled side down, on a sheet of foil.

Spoon a ¼ of the tomato mixture over the salmon.

Fold the sides of the foil over the fish and tomato mixture, covering it completely. Seal the packets by crimping the edges.

Place the foil packet on a large baking sheet.

Repeat until all of the salmons have been individually wrapped and placed on the baking sheet.

Bake until the salmon is just cooked through, about 25 minutes.

Using a large metal spatula, transfer the foil packets to plates and serve.
