Grilling with spice doesn’t get much better than a scrumptious Beef Satay recipe. Top sirloin perfectly marinated in coconut curry sauce and served with a lime wedge and peanut dipping sauce. You can bet all your friends will ask you for this recipe!
In a medium-sized bowl, whisk together the coconut milk, curry powder, sugar, curry paste, and salt. Add the beef strips to the bowl and stir to coat evenly.
Cover the bowl with a lid or cling wrap and place the bowl in the refrigerator. Marinade the beef for at least two hours. For the best results, let the beef marinade overnight.
After marinating, thread the beef onto the skewers. If cooking on the grill, heat the grill to medium-high heat and cook the beef for 3 minutes on each side.
If cooking on the stovetop, heat 2 tbsp of Clearly by Best Choice Olive Oil in a sauté pan over medium-high heat.
Cook the beef for about 4 minutes on each side or until the beef reaches your desired doneness.
Transfer the skewers to a plate and let them rest for 5 minutes. Then top with chopped peanuts.
Serve with peanut sauce and lime wedges, if desired.
