DIRECTIONS:
In a medium size mixing bowl add oil, soy sauce, honey, vinegar, ground ginger and garlic powder. Whisk to combine, then add cut up beef. Cover bowl and let marinate in the refrigerator for at least an hour or overnight. Place cut mushrooms, red onion, sweet red and yellow peppers and zucchini in a separate mixing bowl. Top vegetables with olive oil, salt and pepper. Stir to evenly distribute. On about 10 soaked wooden (or metal) skewers add cut veggies and marinated beef alternating by color. Grill kabobs over medium heat, covered until beef reaches desired doneness. About 10-14 minutes. Serve with warm rice.
