Sweet Potato Mac & Cheese


2 cups sweet potatoes, peeled and cubed in half inch pieces
1 small yellow onion, quartered
2 garlic cloves
1 tbsp Clearly by Best Choice Olive Oil
1/2 tsp Best Choice Salt
1/4 tsp Clearly by Best Choice Ground Pepper
1/3 cup Clearly by Best Choice Raw Cashews
1/3 cup Clearly by Best Choice Nutritional Yeast
1/4 tsp Clearly by Best Choice Dried Thyme
1 cup non-dairy milk of choice
1 cup Clearly by Best Choice Vegetable Broth
1 lb Clearly by Best Choice Pasta of your choice

What is sweet, noodly, and cheesy all over? Sweet Potato Mac & Cheese, of course! You can’t go wrong combining sweet potatoes and savory seasoning with a cheesy dish. This fun take on traditional mac & cheese will get your tastebuds jumping and your kids begging for more!


Preheat the oven to 400°F.

Spray a baking sheet with Clearly by Best Choice Cooking Spray and place the cubed sweet potato, quartered onions, and garlic, with the peel on, on the baking tray.

Drizzle the ingredients on the tray with olive oil and season with salt and pepper. Toss all the ingredients to evenly coat vegetables.

Place the baking tray in the oven and roast the vegetables for 20 to 25 minutes.

Remove the tray from the oven and let it cool for 10 minutes.

Peel and place the roasted garlic in a heavy-duty blender or food processor, along with the roasted veggies, cashews, nutritional yeast, thyme, non-dairy milk, and vegetable broth.

Blend ingredients together in a blender or food processor.

Blend all the ingredients together until smooth.

Bring a large pot of salted water to a boil and cook the pasta according to the package directions.

Drain all the water and return the pasta to the pot.

Pour the vegetable sauce over the pasta and mix well.

Transfer the mac and cheese to a serving dish and top with fresh basil or parsley, if desired.
