Apple Chipotle Pulled Pork Sandwich

 

Ingredients

4 Lb Pork Shoulder or Pork Butt

Best Choice Superior Selections Apple Chipotle Simmer Sauce

1 red onion, thinly sliced

2  cucumbers, thinly sliced

3/4 cup of Best Choice sugar

1 cup of Best Choice Apple Cider Vinegar

 

Directions:

Using the sauce mode of your pressure cooker, Sear Pork to seal in juices. Add 1 bottle of the Best Choice Apple Chipotle Pulled Pork Simmer Sauce

Close Lid and set pressure for 1 hour. 

If using a slow cooker, turn to HIGH for 2-4 hours or LOW for 4-8 hours.

Meanwhile, place your quick pickled veggies into a mixing bowl and stir until sugar is dissolved. Set in the fridge until meat is cooked. 

When cooking is complete, remove Pork and pull/shred apart with a fork, and add the sauce from the Instant Pot.

Serve with warmed buns and top with the quick pickled veggies.
