Baked Cod with Lemon Pasta

Ingredients

1 lb Best Choice Cod Fillets
16 oz. package Best Choice Linguine Pasta
¼ cup Best Choice Extra-Virgin Olive Oil
⅓ cup Best Choice Heavy Cream
½ cup Best Choice Grated Parmesan Cheese
½ cup Best Choice Lemon Juice
1 tbsp lemon zest, about 1 lemon
2 tsp garlic minced
½ tsp Best Choice Kosher Salt
¼ tsp Best Choice Black Pepper
½ cup fresh basil chopped

Directions

Pre-heat the oven to 425°F.

Spray a baking pan with Best Choice Avocado Cooking Spray and bake the cod fillets according to the package instructions.

Meanwhile, bring a large pot of salted water to a boil.

Cook the pasta until al dente according to package instructions.

Using a medium mixing bowl, whisk together the olive oil, heavy cream, Parmesan cheese, lemon juice, lemon zest and garlic until well combined.

Set lemon sauce aside.

Once done cooking, drain the pasta and reserve 1 cup of pasta water for later.

Using a large skillet over medium-high heat, toss together the pasta and lemon sauce until well combined and the sauce has been mostly absorbed.
*Note: Add reserved pasta water as needed to loosen pasta.

Remove the pasta from the heat.

Add the salt, pepper, and chopped basil to the pasta and toss until well combined.

Divide the pasta onto plates and top each with a baked cod fillet.
