Best Choice Grilled Fish Tacos


4 Best Choice Frozen Tilapia Fillets
4 tsp Best Choice Superior Selections Extra Virgin Olive Oil
1/2 tbsp Best Choice Chili Powder
1 tsp Best Choice Salt
Corn tortillas
1/4 head of red cabbage, finely shredded
1 medium white onion, halved and thinly sliced
Indian Street Corn, for topping

Pull out four tilapia fillets and thaw them by either placing them in a bowl with cool water until they are completely thawed or by placing them in the refrigerator for 24 hours.

Once thawed, pat the fillets dry and place them on a plate to be seasoned.

Brush the fish on both sides with the oil and season with chili powder and salt.

Place the fillets on the grill over medium-high heat and cook until golden brown and slightly charred for 3 to 4 minutes.

Turn the fish over, using a spatula, and continue grilling until just cooked through, 3 to 4 minutes longer.

Once the internal temperature reaches 145°F, remove the fish and let them rest for 5 minutes before flaking into bite-sized pieces.

Create your taco by layering the red cabbage, white onion, and grilled tilapia.

Then top the taco with Indian Street Corn and enjoy!
