Sausage Casserole


1 lb Best Choice Breakfast Sausage

3 cups Best Choice Shredded Hash Brown, at room temperature

¼ cup Best Choice Butter, melted

16 oz Best Choice Small Curd Cottage Cheese

12 oz Best Choice Shredded Mild Cheddar Cheese

½ cup onion, shredded

6 Best Choice Jumbo Eggs

Start your new year off with a filling breakfast! Our Sausage Casserole recipe combines eggs, hash browns, cheese, and breakfast sausage to create a savory dish. Begin your day warm and full with this delicious dish. All the ingredients you need can be found at your local grocery store.



Preheat the oven to 375°F.

Lightly grease a 9 x 13 baking dish.

Heat a large skillet over medium-high heat.

Cook the sausage until evenly browned and crumbly, about 5 to 7 minutes.

Drain the grease away from the sausage. Discard the grease and add the sausage to a large bowl, setting it aside for later.

In a medium bowl, stir together the shredded potatoes and melted butter.

Spoon the potato mixture into the prepared baking dish and lightly press mixture into the bottom and sides of the dish.

In the large bowl, mix together the sausage, cottage cheese, cheddar cheese, onion, and eggs.

Pour the sausage mixture over the potato mixture.

Bake the casserole until a toothpick inserted into the center comes out clean, about 1 hour.

Let the casserole cool for 5 minutes before serving.
