Ingredients:
Slow cooker liners
1 cup long grain rice
2 tablespoons olive oil
3 cups chicken stock
2 cans tomatoes (any variety)
1 can black beans
1can corn, drained
1 packet Ranch salad
dressing mix
1 packet taco
seasoning mix
4 frozen chicken breasts
Directions:
Cover slow-cooker with liner. Add long grain rice and olive oil to slow-cooker and stir. Then add chicken stock, diced tomatoes, black beans, corn, Ranch salad dressing package and half of the taco seasoning mix, and stir together. Next add chicken breasts into mixture. Top with remaining taco seasoning. Cook on low for 5-6 hours, until rice and chicken are fully cooked.
Serves: 4-6
