Makes 6 burritos.
1 lb. ground beef
1 (1 OZ) packet Best Choice Taco Seasoning Mix
1 ½ cups Best Choice Bean Dip
¾ cup Best Choice Corn Kernels
3 cups cooked Best Choice Spanish Ready Rice
6 large Best Choice Flour Tortillas
1 ½ cups Best Choice Shredded Cheese
Toppings: sour cream, salsa and/or avocado
Preheat oven to 350 degrees F. Spray 9×13-inch baking dish with cooking spray.
Cook beef with taco seasoning according to packet instructions.
For each burrito, spread ¼ cup bean dip down the center of the tortilla. Add ½ cup rice, desired amount of beef, and 2 tablespoons corn. Top with ¼ cup shredded cheese.
Fold opposite sides of each tortilla inward toward each other, then roll up the burrito. Place in the prepared dish with the seam sides down. Complete with all six burritos.
Cover with foil and bake for 25 minutes or until completely heated through. Serve topped with sour cream, salsa and avocado, or other toppings of choice.
