The Superior Winter Salad

Ingredients

Salad
4-5 ounces spring mix or mixed greens
1/3 cup candied pecans, or toasted pecans
1/2 large chopped honey crisp apple
1/2 cup Best Choice Superior Selections Feta Cheese Crumbles
1/2 cup pomegranate seeds
Best Choice Superior Selections Greek Vinaigrette Dressing

Roasted Butternut Squash
3 cups peeled and cubed butternut squash
1 tbsp Best Choice Superior Selections Extra Virgin Olive Oil
1/2 tsp Best Choice Superior Selections Australian Sea Salt
4 grinds of Best Choice Superior Selections Pepper Supreme Grinder

A bright, refreshing dish that perfectly balances all those rich holiday favorites.

Directions

Heat your oven to 400°F.

Toss the butternut squash with the olive oil, salt, and pepper.

Roast the squash for 20-30 minutes, until tender.

Remove the squash from the oven and let it cool completely.

Add greens to a large salad bowl and top with roasted butternut squash, apple chunks, pecans, pomegranate arils and feta cheese.

Drizzle on dressing and toss to combine. Alternatively, you can plate the salad and drizzle each serving with dressing before serving. Enjoy!
